    (Zea mays)

    Purple Maize (Zea mays), originated approximately 2,500 years ago in Mesoamerica and is celebrated by many South American cultures today, especially in Peru. It gets its deep purple/blue pigment from the high concentrations of anthocyanins, antioxidant flavonoids gaining a lot of attention in scientific circles. Grown at elevations over 10,000 feet, purple maize is considered a superfood, making its way into many foods and beverages within the Peruvian culture.†

    (Vaccinium angustifolium)

    Blueberry (Vaccinium angustifolium), was a staple of Native American culture and brought back to Europe by explorers and colonists. Blueberries are harvested from hearty bushes that grow widely throughout North America.     Red Beet (Beta vulgaris) is one of the oldest known crops of human consumption, found in the gardens of Babylon and revered in Ancient Rome. The leafy greens were used primarily until the 16th century when the roots became the more popular plant part. Beets often symbolize love or the heart and Roman legend claimed two people eating from the same root would fall in love.     (Caucus carota)

    Purple Carrot (Daucus carota), is a root vegetable with a history dating back over 5000 years and is truly the original carrot—the common orange variety didn’t come along until the 17thcentury. Historically celebrated for centuries in Central Asia and the Middle East, it’s use spread to the West and the Dutch even fed it to cattle to enrich their milk and butter. A great source of beta carotene which converts to “provitamin A” in the body, it gets its purple color from anthocyanins and a phytochemical called rhodopsin, also known as visual purple.†
