    Purple Maize
    (Zea mays)

    Purple Maize (Zea mays), originated approximately 2,500 years ago in Mesoamerica and is celebrated by many South American cultures today, especially in Peru. It gets its deep purple/blue pigment from the high concentrations of anthocyanins, antioxidant flavonoids gaining a lot of attention in scientific circles. Grown at elevations over 10,000 feet, purple maize is considered a superfood, making its way into many foods and beverages within the Peruvian culture.†

    (Citrus limon)

    Lemon (Citrus limon) may be known most for its sour taste, but this tree-born fruit has been widely used across many areas of society for some 3000 years. Its origin unknown, accounts of Lemon are found in Ancient India, Rome, Persia and the Middle East and, by the 15th century, full culinary application in Europe. California got into the Lemon business in 1751, recognizing its diverse potential uses in ever day life and the fruit’s ample source of vitamin C, and terpenes and polyphenols, which are important phytonutrients.†

    (Malpighi emarginata)

    Cherry (Prunus avium) is a pitted fruit classified as a “drupe” which makes it a cousin to the peach and a distant relative of the coconut. Its origin is most often traced to Central and South American with aliases that include “Amazon or Barbados Cherry”. This dark red/purple fruit is known for its vitamin C content along with magnesium, potassium and tannins, which helps explain its industrial use in 19th century leather factories.†

    (Capsicum annuum)

    Sweet Pepper (Capsicum annuum), which is also known as “bell pepper” due to its distinctive shape, has origins that date back nearly 10,000 years and along with purple maize was held in highest esteem by the Incas and Aztecs, and this sentiment continues today in modern Central and South American cultures. Sweet Pepper is technically classified as a berry and has notable levels of vitamin C as well as lycopene, as widely recognized antioxidants most often associated with the Tomato.†
